Whoopie Pies




We watch a lot of food network here. Which would make you think we all get together and have wonderful cooking adventures. Not so much. However, every once in a while, we'll do a collaboration. One of our dvr'd series is Bobby Flay's Throwdown. We're all about the competition. And we believe that Bobby should never really win, but be a gracious loser to all. Lately, he seems to have more losses that wins, so perhaps he's listening in on us. Anyway, a few weeks ago, Harvey and Katie watched a throwdown about Whoopie Pies. What's a whoopie pie? Delicious chocolate cakes, baked into a cookie shape, filled with a yummy, often cream cheese, filling. I got home from doing something important, no doubt, and they already had the kitchen aide out. So, I jumped into the fun. Our division of labor goes something like this: I'm the recipe reader/technical advisor. Katie is the sous chef/executor of the recipe, and Harvey, thank goodness, is the dishwasher. Based on the ingredients we had on hand, we ended up not going with Bobby's recipe for Gingerbread Whoopie Pies with Lemon-Molasses Swirled Fluffy Frosting but instead made this one.

The recipe was super easy. We actually ened up cutting it in half, and it still made a ton. Definitely a fun project. Next up, soft pretzels!
